I guess There is just a (more or less arbitrary) cut, to not include "fun sells/buys" at 1000000USD per BTC or 0,0001 USD/BTC and the like. I actually like this representation quite much - if the "valley" is steeper on the left side, it's a good time to buy, as you won't push the price low and if it is very steep on the right side it's a good time to sell. I don't fully get the "shadows" on the graphs though, probably the state at the last 5(?) transactions?
