Probably something similar happens before the money ends up in the merchant's account as well. Still, we both trust Visa to get the money from point A to point B without losing it on the way.
Without connection problems it usually doesn't take many seconds for 0/Unconfirmed to appear at the receiving address, so the best solution to worries about confirmation times I can think of is to build the same (or better) trust for the bitcoin network as for the credit card companies. Double spending requires good timing, which is impossible to do, unless you know the position of the victim, and the location of where the next block will be generated.
