How will an escrow protect you from the other party charging back their paypal payment?
Will you require the ecrow to hold the bitcoins for 180 days?

Who goes first if there is any transaction ? Why do you think a trader will not try to scam you and will not chargeback through paypal ? Do you receive via gift option ?

What makes you think that Gift payment can't be reversed?

Otherwise you are going first if you don't trust even a reputable ESCROW.
