The coin is from the MS-64 reference type but not officially graded, sorry for the confusion.

For now yes, I told myself I would sell one when the price hit 1000 USD again. I don't have to sell it. It actually pain me to but I stick to my investment plan.

What do you consider a "fair" price?

The v1 or "errors" always generally sold for more just because they were the first of the kind.  I do agree that the v2s have a scarcity thing going for them.  I think in the near future they will both be selling for about the same no matter where btc is at.  My 2 cents.

You know the reason or it's just because of the price increase of BTC compared to other currencies? Maybe we just need to wait a little longer for the price appreciate. If compared to rare gold coins the premium does not seems very high.

I've very little knowledge about collectibles but I'm eager to learn more about it.

I totally agree with you. If we look at the table published at http://www.spotcoins.com/bitcoin/casascius this coin is the rarest small denomination coin from the inception year 2011

I can start at 1 BTC with a reserve price of 3 BTC but it's not really what I'm looking to accomplish. It's not that I'm in a rush. I'm mostly curious of which price this coin would be valued at. Also as explained previously it's part of my BTC portfolio money management strategy.

I think its the ebb and flows of markets.  This is still a small niche market and its just the way it is right now, maybe people are looking to get some digital back.  Maybe with the price rise we will get more influx of new people interested.

I sold one of the same kind of coins via auction about a month ago.  Same condition based on the pics.  (your coin's holo looks a little decayed, and the other side has a couple of nicks).  It sold for 1.3 btc.  If you are looking for 3 btc as a reserve, I doubt you will get it, but good luck.

Usually best to start a little lower than the price you want it sold for, the price is determined by people who are really interested in this coin at the time it is available and how much they'd be ready to bid for it.
Also MS64 is your own estimate, not one of the highest ratings to start with, I see your finger on the coin itself in the picture, has it been handled correctly?

A lot of small details can make a coin more valuable to the eye of a potential buyer.

And yes, the BTC pump is also influencing the current physical btc market, negatively.

Since the day I received the coins from casascius first hand (in a simple enveloped between 2 pieces of carton, if I recall right). I've stored them  in my safe in a plastic envelop. I guess this is how those coins age. I would not know how to best handle physical bitcoins.

I agree, the v1's seem to go for higher in general, but I think that may change in the long term as collectors become more familiar with the series and mintages.  I agree with OP that the 2011 S2 should be valued more than the S1, but prior sales indicate otherwise.
