What is the difference between mining coins and non-mining coins?

Minable coins mean that the coins are inflationary: new coins keep getting added into the total supply.

Non minable means that there are no newly generated coins (like Ripple)

That is it as far as I know.

The difference is pre-mine when total supply of the coins are mined at the start of the project. Though it seems that mineable coins (you can mine accoding to the algorithm) are inflationary but it is not always a case. It depends on supply and demand. For example, BTC is a mineable coin but it is not inflationary because of demand.

There are many coins that can be earned with mining either POS or POW but there are few pre-mine coins whose supply can't grow. One example is YOVI created by yobit, but pre-mined coins are not worth to invest because dev can flood the market with all premine coins.

What people haven't explained are the different algorithms for each coin.
POW= Proof of Work, basically coins are mined (Bitcoin, Dash,Monero are some examples)
POS = Coins cannot be mined. You "stake" coins by using your coins (but no physical process, just earning from our wallet)

There are also mixtures of the two and a few completely different ones like POI (Proof of Importance) and POE (proof of existence).
I think everything else has been explained so I won't go into that.

You will find many different coins there, as far as i know here are the Proofs available :

POW : proof of work, totally minable, like bitcoin, litecoin
POS: non minable, like BLK, PPC
POB: slimecoin, proof of burn, i think they also offer pow and pos
POSV: don't really know, i am not sure

There are others who offers forging, or proof of ressource like maidsaif i think, and golem. where you share your computer ressources to be rewarded.
The best is to google each project and find whitepaper, you will find what you want there.
Or, you can google for POW coins, some blogs give informations about actually minable coins.

Not all coins in crytocurrency can be mined, there few of them are not minable but majority of them are minable like monero,doge, vty, icobid, and others that is non-minable was xrp or ripple.
