You can add bitcoins as a mode of payment in the description. Once someone purchases the products, send then the bitcoin address. Once he makes the payment, manually mark it as payment received. Since you are marking it as payment received, you will not be depriving ebay of their commission, so they will not take any disciplinary action.

I don't think ebay would approve of this, As in this case ebay doesn't act as an escrow. Ebay only wants you to use their payment methods.
