Title: It is possible to fork Breadwallet and add support for Bitcoin (cash) ?

I have the native development skills but not the crypto knowledge -

Does my task require support from Breadwallet proprietary APIs ?

Yes, you can fork the Breadwallet source code and add support for BCH. There isn't anything that's stopping you from doing so. How you are going to do that is up to you and for you to figure out.

AFAIK there are no proprietary APIs, the whole thing is open source under the MIT license.

Yes, you can do it because Breadwallet is open source. There is also some other open source Bitcoin Cash wallets so you can look at them to figure out how to do it and implement it to Breadwallet.
