I just put in my order for my first Avalon 741. I did some searching around the forums but wanted to confirm. If I get one of the 1200 Platinum Server PS's from Ebay that it will power the Miner fine?

Yes, as long as you run it at -1 or -2 offset.

At 0, there's a chance it'll try to pull more than 1200w.

Does that slow the hash rate down some?

Not much. I usually see >7.2THs using -2

Do be aware that the HP supplies like you linked to are only rated for 900W when ran on 110V. Line in needs to be at least 208V for full 1200W rating.
