Is there a way to completely reset your electrum wallet without loosing info but maybe restoring it?

if your wallet is not an imported wallet (a wallet where you import the keys individually not Electrum generating them for you), then all you have to do is to write down your SEED words on a piece of paper and whenever you wanted you can recover everything with this. it works for all wallet types: Standard wallet, 2FA, Multi sig, SegWit

if by "reset" you mean remove the wallet completely so it no longer is on your computer, then go to where your wallet file is located[1] and delete the wallet you want. be careful not to delete other wallets you may have and make sure that you already have the Seed backed up correctly.
