Firstly, you usually don't get good graphics with a VPS so GPU mining is out. Secondly, I bet every VPS provider has rules against using it for mining, and by watching the CPU usage they can tell very quickly if that's what you're doing.

If you've only got one core then it's probably no good. If you've got 2+ CPU cores then you could certainly mine using half of your cores.
