Which exchanges would you suggest for security? Which ones to avoid? How to tell a good one from a bad one?

Avoid all exchanges which use USDT is the us dollar. It Polonex, Bitfinex, Bittrex and so on... WEX, Bitstamp, Cex.io is a good exchange.

What are you looking to purchase? Cex is an exchange that is still in good standing. Don't use Coinbase.

None of the centralized exchange platforms are secure to use but if they are registered than you can file complaint against them. Poloniex, bittrex, coinbase, bitstamp all are registered trading platform but they can froze,block your account without any reasons if you trade large amount of bitcoin.

There is one bitsquare which is decentralized trading platform but there is not much liquidity but you can trade ETH based tokens in etherdelta which is another decentralized trading platform.

I'm not sure about safest ones but I can recommend this. Never trade all of your bag at once. Let's say you want to convert 10 BTC to fiat. If I were you, I'd send 2 BTC first and convert & withdraw it and then apply same methodology for the rest.

You may think, what if price decreases. Then I will say what if exchange claims it has been hacked and your funds lost?

I recommended you to use etherdelta.  Its a decentralized exchange. Its 99.99% secured. Private key with you.

Bittrex and poloniex Are centralized exchanges the private keys are with them. Can hackable.

Well You have a point but we don't have many decentralized exchanges like etherdelta you are suggesting and we all know bittrex and poloneix as the household names and so dealing with them becomes easier even though they are centralized. I don't keep most of my bitcoins on exchanges and so i don't have a problem trading on bittres  with a few coins in their wallets,.

I didn't know Etherdelta is a decentralized exchange. However, I think their volume is not high as popular exchanges. Maybe Waves DEX will be popular and become one of the mainstream popular exchanges.

There's no safe exchange mate, every user have its own bad and good experienced on any exchange but mostly is on bad side. There are too many exchanges also that was hacked recently so if you want to use an exchange make sure that you dont put all your funds there.
