It would be nice if someone who understands bitcoin could createa spreadsheet with related costs of buying and selling coin.

For the first what do you mean about getting ripped by the service providers? There is a lot of the reliable market just like bitfinex and another such as localbitcoin or even shapeshift.
I don't suggest you to sell or buy the coin through the direct transaction to another person. It's impossible to create a spreadsheet with related cost to buy and sell caused by the volatility of crypto.

I think its pretty much unavodiable in local exchanges. Its like they always have highest prices all around the world. We should basically support more decentralized coins as they will kill off centralized ones.
