Title: What incentive do coins have to mine?

It seems like most coins are trying to get away from mining: ethereum (pos), iota, xrp (pre mined) etc.

Is it safe to assume that all coins are headed in the direction of no more mining?

Yes and no. While there are tons of people with mining equipment there will always be mineable coins since it is an established way towards mass-market adoption of a new coin. However, the big coins are moving away because mining is a very inefficient way to verify a blockchain (spend/energy-wise).

AGRee, mining profitability is a great way to get interest in a coin, before switching to pos once established

Yes as others have said there will always be new mineable POW coins, more POS coins have come out in recent months but many of them are just clones of Dash and not innovative.

It will be interesting once Eth moves to POS to see how it progresses.

mining is very inefficient of days with regard to electricity cost and investment in hardware.
