Is there a way to launch the Coin's app without always having to go to the Ledger Nano website and clicking on Apps link?  What happens if that website gets hacked?

Is that how you've been doing it? You're supposed to install the Chrome app, which you can then launch from the apps menu on chrome, or you can make a shortcut directly to it on your desktop after installing it.

Also it doesn't matter if the website gets hacked, the benefit of using the ledger is that you have to physically confirm each transaction with the buttons and the screen. You can never lose money you didn't explicitly tell it to send.

How do you install this app on a Mac using Google Chrome browser?  It just says "Launch App"

Then you already have it installed. The app is a webpage that runs on your computer that is allowed to access your ledger device through the USB port. You are not visiting a webpage hosted by someone else, but instead visiting an internal webpage you have downloaded. It is however able to be updated by the ledger team, but someone would have to compromise their chrome web store key to be able to do that. And even if they did, an attacker would not be able to steal your balance because you have to manually approve your transactions on your device.

Chrome should have an "apps" button that you click and you will be able to see all the installed apps.

You should see the Ledger Manager and Ledger Bitcoin Wallet etc
