Just setup my Electrum wallet and need to send some BTC to GDAX.
What do I need to know ? What fee is recommended in order for my transaction to be confirmed in the same day ?

You need to see your slider and it'll give you a dynamic fee based on how long you want something confirming.

As there is 144 blocks per day ANY option SHOULD hypothetically allow you to get it confirmed in the same day as each block is found on average every 10 minutes.

You need your deposit address filled in and the amount you want to send along with moving the slider (25 blocks, 250 minutes/ ~5 hours is the minimum fee you can set). You'll also need any password you made the wallet with also.

How do I send using SegWit ?

You don't send "using" SegWit... You either have a SegWit address or you have a Legacy address. You set this up when you first create the Electrum wallet (File -> New\Restore -> Standard Wallet -> Create a new seed -> "Standard or SegWit?")...

Given that you were able to send BTC from GDAX to your Electrum wallet, I'm almost 100% sure your wallet is NOT a SegWit wallet. You can easily tell if your addresses start with a "1", they're legacy addresses and you have a legacy wallet... if they start with "bc1", then they're SegWit.
