Should I buy a Kingston HyperX FURY 8GB or Ballistix Sport LT 8GB or even a cheaper one ?
Does it worth investing in kingstone/balistix ? I don't want to be cheap to pay twice or have a pain in the ass.

Get whatever is cheapest. You can even go for the 4GB RAM stick if you're only building a dedicated mining rig. From my experience, RAM manufacturers and brands are all the same. Never had an issue with a cheap brand. An argument some might make is that other RAM sticks are faster but in reality the difference is negligible when using real world apps.

What GPUs do you plan on using? If not the RX VEGA, then RAM speed or brand should be the very least of you concern.

I simply buy the cheapest 7-8 GPU capable motherboard that the store sells, along with the cheapest CPU/RAM that said motherboard supports.

Usually that means;

ASUS Z270-P
G3900 / G3930
Some 4GB stick of no-name RAM for ~$35-40USD.
