Of course they're capable for mining. I'm using an i7 7700k for mining Magi coin XMG. But I only could mine after work so about 13hours/day not 24/7 running.

With this cpu you can mine any cryptonight based coin like monero/electroneum, intese coin and so on
or cryptonightlight coins - aeon for example, but do not expect too much returns

Whichever has more cores, maybe?

For mining coins which optimized for CPU, it's fine, but i think AMD Ryzen is better since Ryzen offer better multi-core performance while intel 8th gen offer better performance per core. Also, AMD Ryzen have cheaper price with cheap motherboard.
What would be a good AMD motherboard (with many PCIe to GPU mine as well)?

Both are 6 cores, but i5 8600k is 6 threads and i7 8700k is 12 threads. Do the threads affect?

I think I recall it does if every thread has 2 MB of cache.

But please check.
