hey I have a gigabyte p55-ud3r motherboard which has a pcie 18x, a pcie 4x and a pcie 1x... would this support Trifire?

Triple crossfire is no good for mining. That said for games a card on a 1x would do more harm than good for performance with the exception of use as dedicated physics card (nvidia)

I did forget to mention that for mining 1x is plenty of bandwidth

Assuming your power supply can handle that reuters no reason not to. With the exception of cooling limitations at which point riser cables become something to consider.

is there a better alternative to buying 2 5850s?

2 5870s or 1 5970 depending on your budget would be more powerful and have a higher hash/slot density.

have only $500 to play with and will need a new psu either way

Two 5830 and a 1kw will cost under 400 if you change to one 5850 and one 5830 you can come in under that 500 and be close to 1gnash with 2x5850 and 1 5830.

so 2 5850s and a 5830 for under $500? including a power supply upgrade? what will I need?

It's my understanding you already have one 5850. you'll need a good psu in the 750-1000 watt range depending on the rest of the computer and assuming your case allows it since flexible risers from cablesrus.
