What type of information would be interesting to extract from the public ledger (blockchain)?

Estimate number of Bitcoins lost. Very subjective though, because we never know if someone start spending after X years

I'd like to know about the $ value growth of on chain transactions- based on $ value on the date the transactions happened, not based on todays value of BTC.

eg:
Sept 20, 2009 daily total transactions 1500btc, value of btc $0.05 total $ value $75
Sept 20, 2010 daily total transactions 5000btc, value of btc $0.75 total $ value $3750
Sept 20, 2011 daily total transactions 150000btc, value of btc $1.25 total $ value $18750

Wallet sizes?
EG
80% are less than 1 btc.
10% hold 5-10btc
5% are 100-1000
1% are 10,000 and above.
Largest wallet holds 25,0000

Look how long it takes for a transaction to be included based on fee amount
