Could someone please explain the difference in joining a small pool or a pool with more people in it

Well in the long run it is the same thing.
That being said, large pools have less variance in their payments than smaller ones.

Of course thats not the case for pps pools but i don't think there are any pps for bitcoin.

% fees and variance in payments

Both options work, but always make backup pools so when some pool server is out, you can continue mining

For the security of the Bitcoin network, it is better to join a small pool than a large pool. Right now gnash.io and btcguild together have more than a 50% share of the total hash rate. The two operators could very easily get together for a 51% attack. It is not likely, because such a move would ruin their business, but it is possible.
