Title: Globe Earth

How as an individual can I know if the Earth is a pancake or a globe? What experiment can I do that doesn't involve trusting information from a 3rd party that would prove what the geometry really is?

Geodesy is the science of studying the shape of the earth, and the shape is an oblate spheroid. That means it is squashed so that the pole to pole diameter is less than that at the equator. It is a bit of a stretch to think of this as flat though.

We can see the moon is round. We can see the sun is round. With some difficulty or with the aid of some basic optical equipment (telescopes) we can see the other planets are round and rotating.

Why we can not see beyond the horizon ... some flat earthers actually tried this experiment with lasers and couldn't believe the result (they still think the earth is flat despite evidence).

For the experiment, you need a good camera (with an optical lens) or binoculars. Stand near the sea or some other exactly flat surface. Look through the camera in the distance from the level of your height, then from another height (for example, 20 meters). You need to look at some object in the distance (for example, a boat in the distance, standing in one place). This is for short. Look on the Internet how to make calculations, what should be visible and what should not, if the earth is flat or round.
I've seen many such experiments and I can say that the Earth is definitely not flat, but not as round as we are told (perhaps the dimensions of the Earth are larger than they tell us)
