I'm not from the US but did some digging and found "Premier Shield Insurance": Our Insurance Agency Accepts Bitcoin (https://www.premiershieldinsurance.com/insurance/bitcoin-insurance/insurance-agency-accepts-bitcoin/)

Take note: I'm not vouching for their services (DYOR).
- Their website doesn't look professional at all but they have a lot of "reviews on google (https://g.page/PremierShieldInsuranceAgency?share)". Having said that, fake reviews are quite common nowadays.

same as suggested above that always make your own research and verify up things.These responses are not precisely telling that these services were legit.
You can always verify things up before you do proceed.

Why not sell your coins and paid them with fiat instead? I'm not sure how the law certainty on US is but I'd avoid any new company claiming they provide insurance with bitcoin. The chance of getting scammed is higher than ever.

Selling Bitcoin for fiat is choice only if there is no way to pay for insurance directly in Bitcoin. Maybe OP want to spend his Bitcoins directly. Otherwise he would have to pay some extra fees - Bitcoin transaction fees, exchange trade and withdrawal fees.
I haven't checked any of websites posted above, but if OP planning to use it, he must make serious research before it if he don't want to get scammed.
