I'm ready to make the move off Coinbase but I love the app for tracking my balance, is there an app where you can input your balance just for tracking purposes? Thanks!

You didn't specify which crypto-wallet it was, but what you need is actually a watch-only wallet that works on the principle of tracking one or more coin addresses, without including your private key or seed. If you only have one or two addresses then you will not need a Master Public Key, you can only enter them and make a watch-only wallet.

Since I don't know which hard wallet you plan to use, I'm giving you examples of how to make a watch-only wallet on the example of Electrum and Ledger Nano S.

If you just want to track your balance, then I guess a mobile app is enough for it since it's portable and you can check it anytime unlike on desktop, so I suggest electrum or mycelium just import the wallet address so it will just a watch-only address.

Or if for desktop then the suggestion above is enough as for electrum desktop wallet.

Any wallet could help you track your balance. All the transactions are being recorded in the blockchain I think even the LN for bitcoin still will going through blockchain. This is what bitcoin made of a decentralized currency using only blockchain for a means of trust to each and every user. Of course, trust is really needed here and transparency due to the fact that we are anonymous.

Ledger have a companion app that you can use to track your wallet. Not sure about Trezor though but I'm sure they will have a similar product.

Correct me if I am wrong, Ledger nano and Trezor are both hardware wallet which have their own software where crypto balance could be tracked. With regards to the usage experience, I could only stand for Ledger nano which has a live application. Trezor has been mentioned as one of the recommended hardware wallets but I do not have any experience of using it yet.

Exposing your master public key will severely reduce your privacy. When putting it into an app, the app has to make a connection off the phone to get all the transaction information related to your master public key. This means that the app, or the server that it connects to will know the transactions that you have made or will make in the future.

Not saying you get loads of privacy from using Coinbase. I would recommend you to just monitor individual addresses as and when you need to.

I think what OP is asking is for a simple portfolio tracking app to monitor the value of his coins in fiat, as opposed to all the suggestions so far involving watch only wallets or wallet tracking apps.

It's available for both Android and Apple, and has recently been updated to include not just cryptocurrencies but also stocks, ETFs, indices, futures, and so on. You simply input your balances and the app will track their value in your choice of fiat. You can generate various graphs and tracking information, as well as set notifications regarding price targets or movements.

I'm using Blockfolio at the moment and it’s enough to track the balance, changes etc (all in one), although there are a lot of alternatives. I don't know if any other portfolio tracker have the option to hide the balance (I loved this feature because it’s not good to show your balance when you open the app as there may have different people, this can be risky.)

On top of the portfolio managers Little Mouse and  o_e_l_e_o suggested, there's also another one I use called bituniverse (https://www.bituniverse.org). There's an app on both android and iOS platforms. Basically you just have to paste in your Bitcoin or ether address holding your funds, and it will watch your coin value in the addresses over time. You will be able to see daily loses and graphs.

This is a big help to monitor your portfolio every now and then with your mobile phone which is very handy to manage even you are on travel. However, you can try also those suggested before on my post they are also good tracker app, you can use any of them as long as you are comfortable using their system.
