I only have just now noticed this, it has happened before. What exactly is the second transaction of a random amount of BTC?

The second output of your transaction is change. If you don't spend the whole value of an input then you have to send the remaining part back to yourself, preferably to a new address for privacy reasons. See this Trezor wiki entry (https://wiki.trezor.io/Change_address).
