pay attention to AtomicDEX from komodo.
AtomicDEX is a secure wallet and non-custodial decentralized exchange rolled into one application.
Store your coins, trade peer-to-peer with minimal fees and never give up control over your digital assets.

There is Bisq.network decentralized exchange that is fully open source and it supports Bitcoin, fiat and few altcoins for trading.
Atomicdex mentioned before is also alternative dex option but it's still far from perfect, volume is not great, and beware that all other wallets like Exodus are closed source and they are using some centralized partners for coin trading.
Check out bisq trading volume and supported currencies:

I search a bit on Github it seems there are lots of open-source dex wallet that includes exchange and I found only two of them that I think support BTC and few altcoins.

I'd like to add them here in case if you need them you can check them below

This is looks interesting. I took at look at it, and it supports just a few altcoins, BTC ETH LTC USDT, XTZ and a few bitcoin pegged tokens.
I am looking for good decentralized exchanges to swap some coins to stablecoins without any KYC and this looks good.

The only downside I see in AtomicDEX is that you cannot connect your ledger nano to it. You always have to create a new wallet or enter the seed phrase. I don't like this kind of security... I see that ledger nano doesn't support it as well.

Do you know if it is possible to use it using ledger or trezor?

I am using UNISWAP for now, but the fees are crazy (60to 150USD per swap) and it doesn't support BTC (only pegged BTC tokens)

No, it's not possible to use Atomicdex with hardware wallets, and even if you could do it there is a problem with low low volume and low liquidity.
If you check dexstats.info you will see that total volume for last 24h was only around $51500 or 1.12 BTC, and majority of trades are done just for KMD/TKL trading pair.
That means you can't really use Atomicdex in real life yet, and Bitcoin addresses there are still using only legacy format starting with 1.

The only downside I see in AtomicDEX is that you cannot connect your ledger nano to it.
Main downside is that nobody really uses Atomicdex.

Yes, low liquidity and the reluctance of developers to do something about it is a serious problem.
Developers created a product, but forgot about marketing, here's a product, use it however you want.
The community is in no hurry to use.
Vicious circle.

The problem that must be paid attention to is enough liquidity to conduct transactions.
No matter whether exchange dex is open source or closed, unless there is enough liquidity, there is no point in using open source code.

please read this points:
  • exchange process can be done decentralized and with high trust without the need to be open-source using multi-signature.
  • What are the currency pairs you would like to convert? If it is among several blockchains, the best is bisq.
  • within the same blockchain The problem is the fees because they will be prohibitive and meaningless for small transfers.
