I might just be a little dumb, but is there an official announcement, and/or countdown until Ethereum cannot be mined? I can't seem to find anything definitive.

You cannot find one since there are no exact dates when the move from POW to POS will take place. Roadmap says staking is projected this year but I suggest not to hang on to that since it's been delayed so many times already.

"Ethereum 2.0" has been scrapped and rebranded as "Consensus Layer" while the current Eth 1 will be called "Execution Layer".

I lost some possible money all because Ethereum failed to deliver what they promised seems to me that Vitalik Buterin has already lost that genius and Midas touch within him and his people are still lost on solving the main problem in the Ethereum network. And this is good news to other blockchain network which are mostly offering negligible transaction fees unlike the unbelievably high offered by Ethereum. Anyway, I am still hoping that Ethereum can get past of this obstacle to its growth potential.

When Ethereum 2.0 comes out in the future, it shows that it wants to improve every part of the network so that it can handle the amount of growth and interest that it sees. To figure out when or if it will be released, I can't predict it or keep track of how long it will be until Ethereum can be mined. But this technology is coming soon or later, and a lot of people are interested in it, too. I think we're looking forward to the next time. It's important to keep an eye on how it's done because it's both new and good.

No and there's no ETA for that. You must keep witht the latest update about that. it seems like that if you have not even aware about that. It can be said that if the ethereum pos may get another delay again until next year. this means when you are seeing it there was a rumour about that and that's totally not true.

no notification for this yet. even from the latest information i know, it looks like ethereum 2.0 is not a new network rather it is like layer2. so their development is like starting all over again. unlike the original plan of those who wanted to create a new network, maybe they were in trouble. so maybe the announcement about the launch countdown won't be made any time soon.
They are no difference, some people would say that the ETH 2.0 is another token, but that is not true, there is no ETH 2.0 token. And it is now referred to as the consensus as the other comments have pointed out. The development is a step by step progress, and it has about three stages: the Beacon chain, the merge, and the Shard chains.

The Beacon chain has already gone live in 2020, so it is the Merge that would be next, and it should be anytime this 2022 according to information on their website and other media websites. The final stage which is the Shard chains would somewhere in 2023. Whatever changes that were made are for the better.

I haven't found any info about the planned launch time of Ethereum 2.0. Ethereum 2.0 has been delayed several times. Hopefully this year, the ETH 2.0 plan can actually be realized because ETH 2.0 can be a solution to some of the problems that occur in ETH.

 the current consensus algorithm used by Ethereum is Proof of Work, and that the switch to Proof Of Stake will occur in the future eht v2.0.
You can follow the thread shared by the member @zasad because there is no exact date and I think the coming days will be decisive regarding the upcoming update.

Asking questions is part of what we do to learn, so it doesn’t make you dumb when you ask a question to understand something you’re confused or do not know about. A lot of people are confused about the Eth 2.0, it’s a normal thing, but if you take your time to read about it, you will understand it for sure.

Right now, there is no longer ETH 2.0, rather it is now called the consensus layer and the ETH 1 is called the execution layer. Everything has been changed and the Ethereum team/developers has done this as a way save people from the confusion of ETH 2.0. you can read up about this on their website where they clearly explains everything and the stages, and also when each would likely be going live - https://ethereum.org/en/upgrades/

The name is no longer Ethereum 2.0 but it's still the same effect and upgrade of what they're trying to do. And to give some estimated dates, you'll see what people think when it shall be implemented but it's still unknown when it will exactly going to roll.

About the changes why it's no longer 2.0, there are many articles that you can find on the web.
