I want to see all the announcements that were recently posted. But whenever someone responds to an old announcement it bumps the post. So, How do I view only the new ones?

A news feed will be sent to your email whenever a new project announcement is posted on that board.
Or if you asking about the announcement thread's new post then you can click the watch option of the thread you are following. I suggest you try the Ninjastic.space search engine. You can filter the results to only a specific board and put -"Re" in the "Post Title" search field so that you list only topics and not replies.
