Escrow involves the buyer sending the money to a trusted member of the forum, who then sends it to you after the buyer receives the card or arbitrates it there's a dispute. The photo of the card with your username written on a piece of paper next to it is to prove you own the cards and you didn't just grab the picture off the internet to scam people.
