Some of the key parts of their released free open source code though still last time I looked at them (a few years ago at least by now) said they were not ready for production use, so making them ready for such use and releasing the ready code would be a very useful side-effect of your interest in the DEX-development field. Move down to his question; as we know there have been several exchanges out there, I mean decentralized exchange that have been solving the current problem which people are using. Checking from CMC you would see that the list of dex is actually high and most time people are likely to use CEX than dex, especially someone like me who doesn't care so much on the Dex (swapping coin using Dex) due to some security purposes concerning my wallet. For example, each user could customize their own trading rules in their DEX to provide liquidity to the market. You provide all the software and instructions which can help them create the standard kind of API for their DEX. Users could set up limit orders, or complex trading rules, for example.
Then, you hook this all together, so that it's a central marketplace. Swapping from one coin to another, all the best orders would come up across all the participating DEXes plus other public DEXes. One of the biggest challenges would be ensuring trust. You might have to set up some sort of multi-sig with bitcoin collateral set aside, or slowly increase the amount that can be traded. The collateral can be used in case of an issue with that exchange. These are the technical challenges that would be difficult to solve. In this way, you can hopefully add coin after coin and make your platform somewhat open to new coins. And keep in mind that any exploit at all will be exploited. You would need to invest heavily in bounty programs and security audits and be careful not to use code from any developers from North Korea. But in theory, if you technically did this, you could hopefully offer all the possible trading pairs and the best prices because anyone could add liquidity. The login must be done through an anonymous virtual wallet like Phantom or Metamask. Decentralization means being everywhere at the same time. How are you going to do that? Because if it's in a data center, it's not decentralized.

Are you suggesting that if the domain/UI needs to be accessed through a hosting service, it means that an exchange is not decentralized, so they should use IPFS or something similar? But that doesn't exactly mean being everywhere at the same time since you'll have to connect to nodes still. On top of that, logging in using a web3 wallet doesn't guarantee anonymity either. Demex is pioneering through creating a bitcoin-native DEX, HyperLiquid has recently exploded as a leader, and Uniswap was one of the first (and still renowned) DEX solutions.
