How do you choose a service to exchange? What factors do you need to pay attention to? For example: I need to get cash in my city, how do I know which service to choose and which to avoid?  ???

You have cryptocurrency and want to exchange to fiat in your city, is this your point of view?
If that is where you stand then you have to choose an exchange that is compatible with your city(because there are exchanges that alphas restricted some regions) and also work with exchanges that meets your specifications (it could be decentralized or centralized) then you can use the p2p services on that exchange, the transaction is overseen by the exchange but you should also confirm that you have actually been credited before releasing your cryptocurrency.

To answer your question, there are reputable exchanges and there are some that are not for one reason or the other, now thins all depends on what you want to exchange.

If you're considering crypto exchanges, then we have them of two categories, a centralized exchange and a decentralized exchange, now when it comes to choosing which of these exchange should i go for, you can first learn to know their differences with examples as well.

- High on the list is reputation. An exchange with a good reputation should be high at the top of your list as it poses a higher risk of resulting in you getting scammed.

- Low fees and an easy to use website is next. You need a website that does not take out your funds as fees and one that is fast and solves disputes quickly.

- You could look for one with a P2P service too.

Other features like privacy are subjective to what the user is looking for.

Binance is the most trusted centralized exchange that you can use if you want reliability because it offers P2P exchange that supports wide range of currencies.

You can use too decentralized P2P exchange if you don’t want KYC. There’s some variation on rates and currency they offering. I still don’t explore much Decentralized P2P because mostly doesn’t support my local currency but I will be happy to try one if given a chance.

To make it simple. Choose the service that being use by the majority to play safe.

First we needed to understand the kind of services you want, if it is decentralized exchange services you need for your city in terms of cryptocurrency exchange, if so then there are lots of exchange that can help you get a P2P transaction on your local currency, we have kucoin, Bybit, Binance etc, you just to look for the one that has the availability of your local currency to do a P2P transaction with then read the terms and agreement before going ahead to use it.
 If it is cash you want, then an exchange will help you to pair with somebody that will pay the the equivalent of the cryptocurrency you have in your local currency into your bank account.
What to look out for, make sure your bank account is been credited before releasing your coins.

If you don't care much about your privacy you can consider doing a search on registered centralised exchanges in your country. Some reputable exchanges might be restricted in your country. In my country Binance has been banned from operating. You can easily seek redress if you have any problem in an exchange that has the license to operate in your country. 

The years of operation might be another factor to consider when choosing an exchange. I don't trust some of these new exchanges. Some of them might have fraudulent tendencies.

Popular or reputable exchanges might be better to use than unpopular or unknown ones. These well known exchanges care much about their reputation.
