Im looking for a PSU that has 8 separate 6 PIN plugs that I can use to power assorted mining equipment. Ive found many with 6 x six pin cables... but 8 cables is much harder to find.

back to the op the evga 1600 has 9 plugs 1 rail   once again I ask what is you are looking to power.

There is another  psu with many plugs, but it has multiple rails.
If only 1 psu is your goal and you do not want to worry which plugs to the gear the evga is the one.
If you want a cheaper piece of equipment I need to know want you are powering with the plugs since the plugs go to multiple rails and overload is easy to do.
In the meantime I will find it for you.

mostly modular

DPS2000 can do it with 12, the DPS1200 can do 8 or 9 depending on load.

Do you know if it comes with 8 cables that are actually 6 pin capable?

You've said lots of words in that sentence but it didn't really make sense.

Let me break it down :-)

I need 8 cables. I need each cable to have a 6 pin PCI-E plug on it. Does the PSU include 8 such cables?

That looks like 6 cables, 2 of which have a second 8pin connector. That is 6 discreet PCIE connectors, not 8.

here is a pair of  photo's from corsair's website

Now if dogie says  he has one with 8 plug's and 8 separate cable's
it means corsair has a mistake on the website.

I see 6 plug jacks for  6 pcie cables

http://imagizer.imageshack.us/v2/1280x1024q90/540/RBTlB5.png

I see 6 pcie cables 2 of which look to be 2x ended

http://imagizer.imageshack.us/v2/1280x1024q90/746/uzKQBl.png

so back to what I said only one fully modular 1 rail 8  well 9  separate cables is the very expensive evga 1600

maybe the corsair 1500  it has 10 but is more then 429 usd

All of ATX PSU is intended to use for building desktop PC not for mining purpose. So it's just normal if they come only with maximum 4 pcie cable(yes some beast come with 6 cable). For gaming desktop you can build SLI using 2 GPU card, that will use 4 pcie cable(2 each).

Instead of buying PSU that come with 8 pcie cable, it's will be cheaper to buy 2 PSU that come with 4 pcie cable for me.

As someone posted earlier, the EVGA 1600w has even more than what you're looking for.  So does the SeaSonic Platinum 1200w (but some of those cables have 2x 6+2 pin PCI-E cables).  If I remember correctly, my Thortech Thunderbolt Plus 1200w has 8 of them (4 attached and 4 modular), this one is single rail (even though some earlier literature stated multi-rail) and has a nice display to show the Watts going through it and other info.
