I just ask because I have had a transaction go unconfirmed for this long before and the coins came back to me. The transaction just disappeared. Never received payment, and when I emailed them they said the transaction wasn't in their history.

Hoping that doesn't happen with my SD winnings. :) Are you using a client that lets you spend coins on 0/unconfirmed? (e.g., Blockchain.info/wallet?) Anyway, the problem is the coins that are used in that transaction themselves had not confirmed. So, it will eventually get sorted out -- probably by SatoshiDICE re-creating payout transactions. As a result, the transaction you see will probably never confirm, you'll get a new payout transaction. That could take a full day for them to do that. The problem is with the payment, which will never confirm. You'll have to wait until they re-run the bet through their system, which can take 1-2 days.
