Difference is simple , postcount increase when you post , Activity increase only if you have posts but also increase maximum 14 points per two weeks . Last Activity reset was last Tuesday (8 December) which means that your activity won't increase by 14 points until 22 December. But activity levels are limited to 14 activity per fortnight, which converts to 1 activity per day. They take quite a bit of time sometimes to update as well.
