My XFX ones can run at 290 Mhash/sec and automatically keep their fans down at about 30-40% (running at 85 celcius), so that's pretty awesome.
So if you're going for quiet, definitely go 5850 as your video card. As far as cases, just read newegg reviews. Usually loud ones will have many reviews saying they are loud, whereas quiet ones won't have any mention of noise (since people won't put that their case is quiet usually). But I agree with ensign, you can't beat Newegg for great reviews...

Sorry anything else wont work except for hobby / trial usage. You need tons of power = tons of heat = tons of noise to move heat out. Point.
