Title: WHere is wallet.dat stored?

can't find it in my bitcoin-qt directory... !

It is in your Roaming folder.

On a Mac:

No

You just copy the new wallet.dat to the right location (see above).

Seems like the same thing, just checked both wallet and backup.dat (i named it backup) and they are the exact same file.

just because i'm OCD can i get a confirmation on this? :P

You can do either.  The Backup Wallet command is doing just that, backing up the wallet file.  Copying the wallet.dat file manually should do the same thing.  You can test/confirm by closing down the Bitcoint-QT client, renaming wallet.dat to wallet_old.dat (or whatever you want) and rename backup.dat to wallet.dat.  Bitcoin should start and should look the same since they are copies the same wallet.  This confirms the two files are the same.

Are these encrypted?  Just my suggestion, but you don't want unecrypted copies just lying around.

Also, if interested... I have an SSD as my main hard drive, and I don't want to Bitcoin client and data files on that drive, since it's 7.5 gigs+ now.  If you want to tell the client to look for all of the bitcoin data files somewhere other than the default location, you can copy all of those files somewhere else and then point the Bitcoin client shortcut to that new location.

Example - If you have your bitcoin data copied to a BitcoinData folder on a E-Drive  (e:\BitcoinData), you can change the shortcut to:
(assuming Windows, obviously)

"C:\Program Files (x86)\Bitcoin\bitcoin-qt.exe" -datadir=e:\BitcoinData
