ATI ones.
6990 is obviously the fastest - but expensive.
All depends how much you have to spend, whether you care about power consumption, fan noise, heat generation, playing games, selling the cards on afterwards blah blah.
If you just want to go mining, mid-range ATI is probably your best bet.
Easiest thing would have been just for me to point you here:

The one you used 3 months ago when mining was profitable.

The best current bang for your buck, out of the available models, is either a 5770 for ~$90AR or 6870 for ~$165 AR.  Best hash to $ ratio.

I would always go with ATI ones.

A used 5970 or 5870 probly would be good if you can find them for the right price i got my 5970 with waterblock for 450 a few months ago but i just started to mine a few days ago.

Here is a Google Spreadsheet comparing all the ATI cards.  It shows the best bang for the buck. (If you can find cards at those prices.)

The 5970s and 6990s are definitely the most powerful, but its very hard to find a reasonably priced one right now.  If the budget doesn't matter, there are a few selling on ebay.  If your trying to budget, go for a high mhash/price cards, such as...

5850's which are great if you can find them for ~$150
I'm getting 350mhash/s out of both of mine

6950's are the next best and I just ordered two of the MSI 2gb 6950 reference models (http://www.newegg.com/Product/Product.aspx?Item=N82E16814127555&cm_re=6950-_-14-127-555-_-Product) from newegg for $280 ($260 after rebates)
Should get 400+ mhash/s with unlocked shaders.

Regardless of what cards you choose, keep in mind that the current trend in difficulty has been about a 50% increase every 9-10 days... caveat emptor.

5830's are an awesome bang for the buck.  Damn hard to find them in stock for $120< though.
