You take multiple pictures at different exposures from very under-exposed, to very over-exposed, then compile them together, either manually, or automatically with software (photoshop will do it, but isn't the best). The result is that the dark areas are brightened and the light areas are darkened to give an even exposure across the whole image. For example, imagine taking a photo of the light at the end of a tunnel . Ordinarily you'd just end up with bleached out arch shape in the middle of a black box.
