For example, if your gmail address is example@gmail.com, add a plus sign and more letters like example+spam@gmail.com. This way, if they start sending you spam (when, not if) instead of trying to block each sending address, you can just make a filter that deletes all email sent to example+spam@gmail.com but not example@gmail.com.
