Title: what can I mine now with the vega 56 rig?

I am now mining Monero using a vega 56 rig. With new xmr algo planning to roll out in coming Oct., GPU mining for Monero is inefficient so I am going to stop mining it using GPU. But the problem is, what can I mine now with the vega rig?

Vega can mine only Cryptonight with high ROI.
Look at cryptunit for available coins

vega were unefficient earlier . now they cant mine anything with good profits . they drain too much power. and these times there is nothing so much profit to mine ..
 i suggest you to look at epic coin , you can mine progpow or c29
or you can try ckb but i dont know if there is opecl miner

Are these GPUs really that power hungry? I've never owned one but keep checking eBay and the prices seem to be coming down and wanted to pick up a couple.

Comparing this GPU however to my old RX 470 4GB it seems its more unprofitable than the Polaris GPUs. Basically the XMR mining currently yields the same profits as my RX 470. And if switching the VEGA to ETH mining it produces like 9 cents per day instead of 14 cents with the RX 470 4GB.

Anyone know how it will perform with ProgPOW for the possible Ethereum fork algo change which might happen in 2020 ?

yes they hash more only for some algos... and they are very power hungry... i have been always in loss with that cards for a year till i sold on ebay.
it maybe that people want to give away their cards now too so the prices are going down. vegas were good in 2017 when they came out

Perhaps a good idea would be to get rid of them until they are completely worthless after a hardfork on RandomX
I would exchange them for GPU from NVidia or for L3+. At least L3+ has a quick payback now, after the hash rate of the Litecoin network has decreased.

you can also mine eth and other ethash based altcoin
also zcoin with mtp algo
beam
check out the coin with the most profitability and go for it
