See https://github.com/bisq-network/bisq (https://github.com/bisq-network/bisq), AFAIK it's most popular open source and decentralized exchange.
But if you specially ask about open source and centralized exchange, i've no idea.

Bisq is the best option imo.  The most known open source bitcoin exchange,  and it is there for a long time.

There is also an alternative,  open dax,  which supports bitcoin as well.

There are also some open source ethereum exchanges  where you  an only trade tokens, such as ether delta and uniswap
https://github.com/etherdelta
https://uniswap.org/

OpenDax is good but this doesn't support all altcoins

If you don't want that suggestion above then there are many open-source crypto exchanges I gathered some of them a year ago and here's my list below.

Check this one below the design looks the same as Binance but in the Chinese version, you can maybe edit the language to English.

Other open-source crypto exchanges below.

These one don't know if safe or not but you can check the source if is safe or not

I think your only choice is to use the currently available options and develop them further on your own, or hire a script expert to "copy" other centralized exchanges. I doubt they'll be able to fully reproduce the logic but that should be expected since one of the reasons why cex is using their own code is to avoid hacks. Those cloners probably have a way or two to get the code but it's not as secure as you think.

I've seen a lot of dexs supporting multiple chains right now, mainly BSC, Fantom, Ethereum, etc. Maybe you can go the same route.

..good but this doesn't support all altcoins
I think there's no single exchange platform that supports all cryptocurrencies listed on CMC, it might even Binance, they don't list all altcoins on the market cap so there's no chance that you will find one exchange that supported all altcoins.

As already suggested already above, Bisq and Uniswap are the most common open-source decentralized exchange.  Here's another one, HollEx Kit exchange it seems I heard this but I don't have any personal experience it, so better to find your own way.

If there's centralized exchange open-source might vulnerable to hack and the reason most of them DEXs will survive in the trading business field because hacks and cheat are far away from them.
