Fiery Winds, except for scrypts memory requirement that bitcoin doesn't have. the ltc asics wouldn't be able to offer the same jump in performance as they did for btc.

I hear the sapphire doesn't have a heatsink on the vrm, and the gigabyte does.

I bought 2 7950s so far, but don't have anything to put them in. What do you guys think would be the best option? I'd like the ability to support up to 4 cards, so I guess minimum requirements would be 4 pcie slots and a psu big enough to power 4 cards. Thoughts?

litecoin is scrypt, as opposed to bitcoin's sha256. scrypt is a more memory intensive algorithm, and takes more power than sha256. the cards will be hotter and draw more electricity.
