I do have my miner settings saved.

In interfaces I see LAN, WAN.  If it matters, LAN is green, and WAN is red but this is the readout for the WAN:
Uptime: 0h 0m 45s
MAC-Address: C8:EE:A6:00:AD:84
RX: 5.72 KB (30 Pkts.)
TX: 3.43 KB (27 Pkts.)
IPv4: 192.168.1.64/24
Your WAN is up and seems to be working... try doing a ping from the network diagnostics in the gui...

I pinged is this what it said:

ping: bad address 'openwrt.org'
I noticed that earlier you quoted the miner address as 10.0.1.75, but from the above it looks like 192.168.1.64.

You need to make sure that the address of your miner and the address of your router have the same first 3 values i.e. 192.168.1.xx or 10.0.1.xx, but the last value (xx) must be unique for each device or your miner won't be able to connect to the internet.

That's really odd, i've never made it 192.168.1.64, i've been trying either 10.0.1.75 or 192.168.1.241

I just got my first S1 today and I am able to connect and talk to it, but I can't seem to get it online and mining.  This is my first miner so this whole thing is new to me, and I'm on a Mac, yay.

So I have my WAN on my S1 set to DHCP.  I was able to locate the address of my S1 on my network, which it is currently set to 10.0.1.75.  So when I point my browser to that address I see the GUI, and I'm able to adjust settings, but after entering in my miner info when i go to the miner status page nothing shows up.  Any clues for me to go to?

Assuming you saved and applied the miner settings, maybe try a reboot?

Do you see network connection in interfaces?  If so the little side green light should blink fast and hash.
