ASICs could not even be used to calculate regular SHA256 so they couldn't be used for other cryptographic purposes. They are stuck on bitcoin mining.

FPGA on the other side have a real value outside of bitcoin mining (password cracking, etc).

What would be the gain for the pool owners?

It would be very easy for a pool owner to cheat by not declaring a valid hash as beeing mined by the pool, but the most popular pools have been around for years and are trusted by the community.

ASICMiner are building a mining farm with their own ASIC chips. Unlike Avalon, they are not selling the chips/hasing modules. But you could invest in the company and get monthly dividends.
