When I send bitcoins, it sends them from addresses I've already received to. I thought it would be possible to send from a new address every time, because the bitcoins are tied to the wallet and not to the individual addresses. Is this not the case?

Sorry if this is a dumb question, but when I set a wallet name and description in Armory, does that get published anywhere or shown to those who I send bitcoins to, or receive from? I assume not, but I just wanted to make sure. Are those stored only in files on the computer, or would they be shown when restoring from a paper wallet?
