Won't the difficulty eventually adjust so that then the network will stabilize?
That is my understanding also. There is some incentive to not dedicate hash to mine so difficulty will adjust downward. There is some 20% adjustment that happens after a period of time. Not sure if those can be added together for a 40/60% decrease.

ANSWERS TO YOUR QUESTIONS
1. You assume BTC must be at risk to gain from BCC. I disagree with your premise so this is not a real question, but instead a declaration of your beliefs. I am willing, and I did convert my own BCC without putting my BTC at risk.
2. Once again you are making assumptions and judgements to form the basis of your question. I again reject your beliefs and judgements. I followed what seemed logical to me. My BTC are safe right now and I am holding the BCC. Yes, I want flexibility with MY coins.
3. A free lunch does not exist. But there are windfalls like IPO's and just being in the right asset class at the right time. I worded hard for my BTC so any benefits I reap are from my hard work. I turned $30,000 into nearly $200,000 - and that is hard work!
Just a side note I turned $3,000 into nearly $X Just because i got lucky to have two avalon's batch one delivered on time. How they choose me i do not know still I refused to sell them at 40 000 USD each. I worked hard to make them going 7x24. May be if i was a total newbie and a laysy boy i would make $X/2 because of downtimes. I hold my coins when they drop from 700 EUR to 40 EUR just because of my believes for BTC bright feauture and discipline. But at the end of the day all comes with luck/discipline for me personally. Any timeframe when BCC depossits will be possible on Bittrex?
It will be far far away in time It is very easy to pretend that something has a value when you sell just 1000-2000 units of it. Like botique But when you need to sell more let us say arround 21 million BCC (BCC depossits) that is completly different story Then the real value of BCC/BCH will shine. Free money are not endless my friend The brave ones (first on the train get them) the rest are just paying the bill I know its still in the short term, but you are a legend for being 1000% wrong. You should disappear, you obviously have hidden motives I know that selling one apple million times back and forth at 1 USD making trading volume of 1 mil USD does not change the fact that this same APPLE is just one. SCARY TRUTH INCOMING!
Total coins for sale on Bittrex HASN'T CHANGE MUCH AT ALL!!!!!
It was just under 9K listed BCC post fork... it is now only 9200ish listed. No deposits or withdrawals. Enjoy your bubble because the moment deposits open you will all be dumped on.
If hashrate does not return, because no one can exchange their minted BCC, miners will turn elsewhere. Without a significant portion of the total ASIC hashrate, there is no reason for this coin to keep its inflated value.
That is speculation. Nobody knows the "value" of this coin or any other crypto-coin. Just because you got it for "free" doesn't make it have no value. Those who think that way already sold between .05 and .20. Those might end up being good trades a few hours/days/weeks from now. Nobody knows. I would not have guessed the value would be over $1,000 USD day two. Everyone is right about volume being low because we can't deposit our BCC/BCH and trade/sell. But any good trader will also tell you that if they want to accumulate this coin they will wait for the REAL volume to sell. I suspect the price will dip once we can deposit coins on the exchange. The dip may be permanent or it may just be shaking all the weak hands who "want their free money". I don't know how anyone calls this "free money". I worked real hard to accumulate the BTC I now hold, so the BCC is not free money to me. It has a value and the market is trying to figure that out. Does any exchange allow margin trading / shorting of BCC/BCH? I am on Poloniex and am able to short other coins.

I just lost my unique BCH. I used Electrum, after the fork i sended my BTC to Bittrex, i download the Electrom Cash, used my private keys and saw my BCH, everything is ok, until after a little time Electrom Cash sended my BCH to the same BTC Bittrex address. So is a lost right? No, I don't think its lost. Change servers on Electrum Cash and your BCC will reappear

What exchanges offer trading for bitcoin cash but don't need KYC verifications if I don't plan to deposit or withdraw any fiat? I'm used to Shapeshift and Changelly but they aren't offering it yet. I just made an account on bittrex and they haven't asked for any information yet, does it ask later/what are limits? Is there a good option that I can use anonymously?
I have never had Bittrex ask for anything and I have withdrew 5+ BTC at a time. Polo's $2,000 USD limit is annoying. I have a $200,000 daily limit at Polo , not sure why yours is so low
