I just tell them that Bitcoin is decentralized digital cryptocurrency and is used to transfer large sum of money over the internet and other purposes like investment. Or simply just tell them to Google it and leave it like that.
Seriously, when some people have a smartphone in their hand and they have a Google search engine displayed on it, they'd still prefer to ask people questions.
