So, I have the "address" of my Bitcoin wallet. Is it true that this address will change? And that I need to back it up regularly whenever I get any transactions? And I only need to backup this one address? Thanks!

Your wallet can have multiple addresses.  The address you have is pretty much permanent and if you create another one that is permanent.  You should back up your wallet after big transactions
