Although it's getting much more difficult to know if a project is a scam or not, you can still get a good knowledge by carrying out a comprehensive research on the team, if they are real people and are truly backing the project or not.

Exchanges are really very important in the cryptocurrency community. If you must use an exchange that requires your private keys, then you should maybe create a dedicated wallet for the exchange, one that doesn't keep much coins for you...

Personally, I'd never put all my money on just one ot two cryptocurrency. There are over 1000 cryptocurrencies out there, a lot of them have good features and returns, why would anyone choose to rely on just one or two?
It's always better to spread your cash to maximise profits.
