So my next question is what is the easiest way to do this, having never played EVE  before?

Create a trial account, buy PLEX and apply in-game. You will get PLEX (30 days) + trial account playing time (14-21 days).

Written in that way, it should be the second option.

Isn't 24:00 already a new day? And 23:59 last minute of yesterday.

EDIT: So while I think he meant midnight Sun/Mon, he's written Sat/Sun.
