What do I lose exactly if I misplace or corrupt or forget to back up my most recent electrum.dat wallet file?

I still have the main password + private key, just say the electrum.dat isn't up to date or gets lost completely?

On a similar note, what if someone else gets hold of this single file, but doesn't have the password or private key?

You can use the seed to recover your keys if you lose your wallet file since Electrum uses deterministic wallets.
